Essential Takeaways

  • Honey doesn't go bad the way most foods do. Its low water content and high sugar make it hard for microbes to grow.
  • Air, moisture and heat can still change honey over time. It may crystallize (normal and reversible) or, if it takes on water, ferment (not reversible).
  • Store Manuka honey in its sealed jar in a cool, dry pantry. You don't need to refrigerate it.

In 1922, archaeologists opening King Tutankhamun's tomb reportedly found jars of honey that had kept for more than 3,000 years (source: McGill University Office for Science and Society)

So, does honey go bad? Not in the usual sense. But how you store it decides how long it keeps its best taste and texture.

In this guide, we answer:

  • Does honey expire?
  • How long does Manuka honey last?
  • How to tell if honey has gone bad
  • How to keep Manuka honey fresh

Does honey expire?

No. Honey doesn't expire or go bad the way most foods do, as long as it's stored well.

When bees make honey, they fan away much of the water. What's left is low in moisture, high in sugar and naturally acidic. Microbes struggle to grow in it, so honey can keep for years.

That goes for Manuka honey too. Most pure, raw honey stays edible for a very long time.

There's one catch: storage. Honey pulls moisture from the air. If it takes on too much water, its taste and texture can change, and in rare cases it can ferment.

Can honey go bad? It's uncommon, but yes. Moisture, heat or contamination can cause it to ferment or spoil. Crystallized honey is still fine to eat. If you see signs of fermentation or mold, throw it out.

Warning

  • Don't give honey of any kind to babies under 12 months old.

How long does Manuka honey last?

Stored well, Manuka honey can last for years. Your jar's best-before date is the window when we know it tastes and performs as labeled.

What a best-before date means. In the US, federal law doesn't require date labels on most foods. The main exception is infant formula (USDA). Some states have their own rules. A "best by" date is about quality, not safety.

Why it matters for Manuka honey. Your UMF™ grade and MGO level are measured at the time of testing. They're your guide to what's in the jar, so we recommend enjoying it before the date on the label.

How to tell if honey has gone bad

There are two changes to know about. One is normal and easy to fix. The other means it's time to throw the honey out.

Crystallized honey Fermented honey
What it looks like Thick, grainy or solid; may turn lighter in color Foam or bubbles, a watery layer on top, a swollen lid
Smell and taste Same as before Sour, yeasty or like alcohol
Why it happens Natural sugars form crystals, faster when cold The honey took on water, letting yeasts grow
Is it OK to eat? Yes No, throw it out
Can you fix it? Yes, warm it gently No

Crystallized honey is still good honey. Many raw honeys crystallize over time. It's a natural change in texture, not a sign of spoilage. Some people like the spreadable texture. To make it runny again, set the jar in warm (not boiling) water and stir. Skip the microwave.

Fermented honey can't be reversed. Fermentation happens when sugars turn into alcohol and carbon dioxide (National Agriculture in the Classroom). If your honey smells sour or like alcohol, or you see foam or bubbles, don't eat it. To lower the risk, keep the lid tight and use a clean, dry spoon every time.

How to keep Manuka honey fresh: 3 expert tips

Manuka honey doesn't need special storage, just a few good habits. Here's how to get the longest shelf life from every jar.

1. Start with UMF™ certified Manuka honey

Manuka honey with a UMF™ grade is independently tested for authenticity, purity and freshness. You know what's in the jar from day one.

2. Keep the lid on tight

Honey absorbs moisture from the air, and extra water is what leads to fermentation. Keep your Manuka honey in its original jar with the lid closed. Always use a clean, dry spoon.

Our jars are BPA-free and made from recycled plastic (rPET). Check your local recycling rules before you recycle them.

3. Store it in a cool, dry pantry

Keep the jar out of direct sunlight and away from the stove. A cupboard with a steady room temperature is ideal. Big swings in temperature can change texture and quality over time.

Should you refrigerate Manuka honey?

No, you don't need to refrigerate Manuka honey. The fridge won't make it last longer. Cold temperatures make honey crystallize faster, so it gets thick and hard to spoon. Room temperature is best.

Manuka honey shelf life FAQs

Does Manuka honey expire?

No, Manuka honey doesn't expire in the usual sense. Stored sealed in a cool, dry place, it stays good to eat for years. For the best taste and quality, enjoy it before the best-before date on the jar.

Does Manuka honey go bad?

Manuka honey rarely goes bad, but moisture, heat or contamination can cause it to ferment or spoil. Signs include a sour or alcohol smell, foam or a swollen lid. If you notice these, throw it out.

Does Manuka honey need to be refrigerated?

No. Store Manuka honey at room temperature in a dark cupboard. The fridge makes honey crystallize faster and won't extend its shelf life.

Can Manuka honey ferment?

Yes, though it's uncommon. The risk goes up if extra moisture gets in. Keeping the lid tight and using a clean, dry spoon lowers that risk

Why has my Manuka honey crystallized?

Crystallization is a natural change in raw honey, and it's still good to eat. Warm the jar gently in warm water to make it runny again.

How long does honey last once opened?

Opened honey can last for years if you keep the lid closed and keep water out. Opening the jar doesn't start a countdown.

Why does honey have a best-before date?

The date tells you how long the producer expects the honey to be at its best quality. It's a quality guide, not a safety cutoff.
